Castelmagno DOP is a traditional Italian cheese, originating from Cuneo province where manufacturers have been producing it according to the same tradition since the 12th century. Castelmagno DOP cheese usually consists of 100% Piedmont cows' milk, but it can also be mixed with goats' and sheep’s milk. At Alifood, we select only Castelmagno DOP cheese made from the manufacturers who utilize milk from districts protected by DOP (PDO) certification and aged from two to five months, essential to get the characteristic traditional flavor. Castelmagno DOP has a mild and milky taste, but it can become sharper and salty when it matures. It is appreciated as a table cheese and used in the preparation of typical Italian dishes such as fresh and filled pasta.
