Ubriaco cheese named after its process it is bathed in gallons of dry wine to obtain a unique sweet delicate wine aroma and its complex flavors. It is cows’ milk cheese matured for 2 months but sometimes for over a year with a firm and crumbly texture. Ubriaco cheese has a flowery and spicy aroma because of the wine marc and it is perfect for appetizing antipastos but it’s excellent also on its own or as an ingredient for different dishes.
