

For centuries, polenta has been a staple Italian food which has its roots in the peasant cuisine of northern Italy. This grainy yellow flour is made from ground maize and is available in various grades, ranging from coarse to fine. It has a rich flavour, a yolk-like colour, and has a slightly sweet taste. Polenta is extraordinary versatile ingredient and can be used for many different dishes and recipes, from rustic to highly sophisticated ones. Plain boiled polenta can be served on its own or enriched with butter and cheese (i.e. among others stracchino, gorgonzola or fontina), with all meats, sausages and game. It can also be cooled, cut into squares or sticks, then fried, grilled or baked and served as antipasto.
